Challenge: developing a new spelt-based product

Birkkala Farm is know for its organic spelt that the farm has been producing since 1993. Spelt is one of the first cultivated cereals in human history and its nutritional properties, such as high protein and fibre content, make it an excellent choice, also for many people with sensitive stomachs.

Spelt can be used in many ways for baking and cooking. The current Birkkala product selection includes several spelt-based products: flours, grains, flakes, pasta, muesli, and rusk. In this challenge, the student teams have the chance to develop something new to complement the product family!
